Baked Mushroom Delight

 

 

1/2 lb Mushooms, sliced

 2 TB Butter

1/4 tsp thyme

8 strips of bacon , crisply cooked and drained

3 C grated cheddar or montery jack cheese 

12 Eggs

½ tsp rosemary     

Pepper to taste

 

 

Preheat oven to 275    Saute mushrooms in butter; place on bottom of 9x13 well buttered baking dish. Place bacon and cheese on top.

 

Combine eggs and pepper, thyme & rosemary and pour over layered ingredients.

 

Bake at 275 for 45 min to 1 hour til center is set and top is golden.

 

Serves 8 to 10

 

 

To Prepare in advance:  Just leave off the egg mixture and refrigerate.  Pour the egg mixture on top just before baking.

 

Serve with Toasted English Muffins
