Chili Italiano

 

1/4 Cup Olive Oil                                                           2 TB Sugar

1 large onion chopped

1 lb of each Chirizo Sausage, Italian Hot Sausage            2 TB Cumin

2 lbs Ground Beef                                                         6 to 8 TB chili powder   or a                              combination of Ancho chili                                 powder, chipolte powder &                                 chili powder or pepper flakes

½ tsp salt                                                                                 

1 Head of Garlic chopped

1 28 oz can Stewed Tomatoes                                        2 TB Dijon Mustard

2 Cups V *8 Juice                                                         2 TB Dry Basil

1/2 cup strong coffee                                                     1 can black olives, drained

1/4 cup cocoa    unsweeted                                            2 cans garbonzo beans or other

white beans                                                                   2 C dry red wine

 

Brown meat, onion and garlic in large pan.  Drain off fat.  Add the dry spices and stir until they give a nice perfumn but don't burn.  Add all the rest of the ingredients EXCEPT the beans and the Olives.  Simmer for 2 to 3 hours on low or in a crock pot. 

 

 Correct seasonings & add olives and beans and simmer 1/2 an hour.  Garnish with shredded Italian cheese and parsley or cilantro.  Serves 12 at least!
