Raspberry Almond Shortbread

 

1 C Butter

1 C. Sugar

1 Egg

1 tsp.pure almond extract

2 1/2 C Flour

1/2  tsp baking powder

1/4  tsp. salt

 

Cream butter & sugar, add egg, & almond extract.  Add flour, baking powder & salt to form a soft dough.(Do not over beat).  Spread into a 9x13 pan .  Make diagonal groves with the end of a butter knife and fill with raspberry jam or your favorite jam.

 

Bake 350 for 25 min until golden on the edges. Sprinkle with Confectioners Sugar & cut into squares and store in a sealed container. Yield: 24 or more!
