Finnish Pancake

8 Eggs

 ½ C Sugar

1  ¼ C flour

½ tsp salt

4 Cups Milk

 

1 Stick of Butter  ( divided)  Put ½ in a glass 9X13 pan   & melt the other half for the batter.

In the blender mix the eggs, sugar, flour, salt, milk and melted butter.  This has to be done in two stages as it won't all fit in the blender.

 

Put the baking dish with butter in it into a 400 oven to heat for about 4 minutes until butter is melted & pan is hot.

 

Pour in the batter and bake at 400  for about 40 minutes.  The pancake should be puffy and above the sides of the pan & Golden on the edges.

 

Cut into 12 pieces and serve with Fruit Sauce
