Pheasant Italiano ala Donna

 

 

1/4 Cup Olive Oil                                           2 Cloves Garlic

 2 large onion chopped                                   1 lb of Italian  Sausage

2 TB Basil,dry,                                               1 tsp rosemary

2 Pheasants                                                      2 Fresh Tomatoes

1 TB capers                                                     4 anchovies (optional)

1 C dry white wine                                           1 - 2 C. chicken stock

 

Salt & lots of fresh ground pepper & 3 shakes of red pepper flakes

 

Saute the onion, garlic and herbs till soft.  Brown sausage & pheasant in another pan with

olive oil and  then add the rest of the ingredients and simmer on low for 2 hours until

meat is tender.  Serve with pasta or risotto.  Garnish with fresh parsley.  Yummy

 

This is a peasant type of pheasant recipe!  However, any game will do.  Rabbit and

venison are lovely this way.  Buon appetito. Better the next day!
